what mariel made: mac ‘n cheese tuna casserole

Lately after a long day right before bed, I tend to semi-torture myself by watching a plethora of Youtube videos all centered around one subject: food. Usually these cooking videos always make me crave one of three things: eggs (most of the time, poached eggs), cheese, or pasta. Late at night, I am more of a savory-midnight-snack-type gal.

So, I have included a super easy recipe that I will make sometimes for a quick dinner and then proceed to have for a midnight snack. This recipe incorporates two of the three things that I crave at night: cheese and pasta. It is a mac ’n cheese tuna casserole dish, but honestly you can really mix it up and take away or add anything you desire. If you don’t like tuna, add chicken instead, or just leave the tuna out. If you have some left over broccoli on hand, throw that in the casserole.

quick fix: kraft mac ‘n cheese from a box (use any brand you’d like, or even better make your own mac ‘n cheese from scratch! i can assure you this dish will be exponentially tastier!)

mixing in the cheese powder (ah, maybe not the most appetizing picture of mac ‘n cheese?)

freshly made mac ‘n cheese

simple tuna salad: one can of white tuna, couple tablespoons of plain greek yogurt, salt + pepper to taste (i used nature’s seasoning)

finely diced miniature sweet bell peppers (i had red, orange, and yellow ones on hand)

mixin’ in the tuna

mixin’ in the peppers

tablespoon of melted butter with several tablespoons of breadcrumbs (i used pre-seasoned italian breadcrumbs)

thoroughly mixed topping

butter + breadcrumb mixture evenly distributed over top of the mac ‘n cheese
