Here’s a delicious, healthy, and filling breakfast, lunch, or dinner idea. (In the past three days, I think I’ve had this for breakfast and dinner.) Add or take away anything you please, this recipe is very flexible to all palates.
Ingredients (makes for one serving):
- 1/4 cup rinsed and drained quinoa
- 1/2 cup water
- pinch of salt
- refried beans (I’ve recently discovered my love for refried beans, so flavorful!)
- 1/2 avocado
- tomatoes (I had grape tomatoes on hand)
- 1 egg
- cheese (I used a Mexican 3-cheese blend)
- salt + pepper to taste
Cook the quinoa by combining the drained quinoa, 1/2 c. water, and pinch of salt in a small pot and bringing to a boil. Once the quinoa is boiling, bring the heat down to medium low and simmer the quinoa for about 8-12 minutes with a lid until most of the liquid has evaporated out. Drain the excess water.
Meanwhile, you can reheat the refried beans, half the tomatoes, scoop out the avocado (season slightly with salt and pepper), and cook the bacon. After quinoa is done cooking, cook the egg in the style you prefer (lately, I like sunny side up).
Next, start assembling your bowl by laying down a nice of bed of quinoa as your base. Then add your beans, avocado, egg, cheese, and tomatoes…oh and bacon (can’t forget the bacon). Grab a spoon and dig in!
