what mariel made: stewed tomatoes + eggs

Lately, I’ve been cooking a lot and have been trying new dishes for quick-ish dinners (you might have noticed via the frequent food pictures on my Instagram). Here’s a super easy version of eggs in spicy tomato sauce that incorporates very few ingredients. I hope this gives you an option for a quick and hearty dinner when you’re running low on time and food items in your kitchen.

Ingredients:
– 1-2 cups tomato/marinara sauce of your liking (Prego’s Traditional tomato sauce is my go-to)
– 1/2 onion chopped
– about 1 cup of diced tomato
– olive oil
– salt ‘n pepper for seasoning
– 1-2 eggs (depending on how hungry you are)
– (optional) toasted bread

Step 1: sauté onions in olive oil until translucent (*add red pepper flakes for spice)

Step 2: add tomatoes and continue cooking for about 2-4 minutes on medium heat
Step 3: add tomato sauce and season with salt + pepper to taste and simmer for about 3-5 minutes

Step 4: make a little well in your sauce, add the egg, and cover the pan until the egg is cooked to your liking (I let my egg cook until the white was firm but the yolk was still a bit runny and soft.)

Step 5: toast some yummy bread and enjoy!
